LEGO Rice Krispy Treats

Being a Boy Mom, there are 2 things that I take very seriously; Legos and Snacks. They are both topics my boys are fanatical about, so I aim to please when I can! I took a favorite snack to a whole new level of delicious fun with this Lego Rice Krispie recipe! It is easy to make and delicious! But, the kids might have a hard time deciding if they should eat, play or maybe a little of both when presented with this awesome option!

Rice Krispy Ingredients

  • 6 C Rice Krispy cereal
  • 10 oz mini marshmallows
  • 3 tbsp. butter
  • 1 9×9 baking dish
  • wax paper
  • large deep sauce pan
  • Pam spray

Rice Krispy Directions

  1. Tear off a piece of wax paper long enough to come over the sides of the pan.
  2. Spray with Pam spray and set aside.
  3. In the saucepan, melt the butter on medium heat.
  4. Stir in the mini marshmallows and mix until melted.
  5. Pour in the cereal and mix until combined.
  6. Scoop into the pan.
  7. Tear off another sheet of wax paper.
  8. Press the Rice Krispies down into the pan.
  9. Set aside

Icing Ingredients

  • 3 egg whites
  • 1 tsp vanilla
  • 1/2 tsp. cream of tarter
  • 3 C, powder sugar
  • Blue, red and green gel colors
  • Blue, red and green M&M’s
  • 3 bowls
  • 1 baking shee

Directions

  1. In a standing mixer, combine all ingredients except the colors and M&M’s.
  2. Mix on medium speed until combined or until your icing is bright white.
  3. Add in 1/2 C of powder sugar if the icing is a yucky yellow soup
  4. Once you have your icing, split into 3 bowls and add in a color to each bowl.
  5. Cut the Rice Krispies into small rectangles.
  6. Dip each into the icing.
  7. Set onto the baking sheet
  8. Once all dipped, add 6 M&M’s to the respective color rice krispy.
  9. Let sit for 1 hour.
  10. ENJOY!

Valentine’s Day Love Bugs

This Valentine's Day Love Bugs recipe takes the deliciousness of a cake ball to the next level by dipping them into chocolate and coconut for a sweet treat that will steal hearts!

There is something incredibly sweet about cake balls! They are perfect for sharing with friends and they are the ideal size for having a snack on the go! The small size of cake balls also makes them just the right size for sharing with the kids, in a classroom setting! This Valentine’s Day, I have a recipe for Love Bug CakeBalls that I think is going to cause people to go a little buggy, over their cute appearance and delicious flavor! This recipe takes the deliciousness of a cake ball to the next level by dipping them into chocolate and coconut for a sweet treat that will steal hearts!

Ingredients:

  • 1 box of strawberry cake mix
  • 1 container prepared white frosting (not cream cheese)
  • 1 bag of shredded coconut
  • 1 container gel red food coloring
  • 1 container gel pink food coloring
  • 1 container of small candy eyes
  • 1 package white chocolate
  • 1 package of milk chocolate
  • 1 container of small red and pink hearts
  • Zip-loc bags
  • Wax paper
  • Parchment paper
  • Cookie sheets
  • Pastry bags
  • Small pastry tips
  • Pencil or marker

Make the Fuzzy Love Bugs: 

  1. Bake the strawberry cake following the directions on the box.
  2. Allow the baked cake to cool completely.
  3. Remove from the cake pan and put into a large bowl.
  4. Using your hands crumble the cake.
  5. Add ½ of the container of the prepared frosting.
  6. Now begin to blend the frosting with the crumbled cake by working the two together with your fingers.
  7. Test to make sure that you have used enough frosting by making a ball out of some of the cake/frosting mixture.
  8. Add more frosting if the cake is not holding its shape.
  9. Make your small cake balls.
  10. Place the cake balls into your freezer for about 15 minutes.
  11. While your cake balls are in the freezer begin to prep the coconut.
  12. Place your coconut into a zip lock bag.
  13. Pour the pink coloring into the coconut bag.
  14. Seal the gel food coloring and coconut.
  15. With your hands work the color throughout the coconut.
  16. When the color is even on all of the coconut, place in a bowl

Dipping the love bug in chocolate: 

  1. Place the bowl in the microwave to melt.
  2. Follow the directions on the package.
  3. Reserve some of the melted white chocolate for the feet and antennas.
  4. Line a cookie sheet with parchment paper.
  5. Using two forks dip the cake balls into the melted candy.
  6. Ensure that all of the cake balls is covered with the melted white chocolate.
  7. Dip each chocolate coated cake ball into one of the bowls of colored coconut.
  8. Roll to ensure all of the cake balls are evenly coated.
  9. Set the coated cake balls onto the parchment lined cookie sheets.
  10. Use a drop of melted white chocolate to “glue” the candy eyes onto the cake ball.

Chocolate feet and antennas: 

  • Line a cookie sheet with parchment paper.
  • Using a pencil or marker draw feet for your love bugs. Set to the sidePut the chocolate into a microwave-safe bowl.
  • Place the bowl in the microwave to melt.
  • Follow the directions on the package.
  • Once melted, spoon the melted chocolate not your pastry bag
  • Twist the top to secure the chocolate in the bag.
  • Trace your outline of your feet with the chocolate
  • Now fill the feet with your chocolate so it is solid

Antennas: 

  • Take your white or regular chocolate and pipe thick lines on wax paper
  • You can have fun here be creative straight or curvy…
  • Now add your heart candy on the end.
  • Remove your chocolate feet and place on another cookie sheet
  • Take one set of feet and then add a drop of melted chocolate to the middle of the feet and place a cake ball right on top.
  • Now take a knife and create to slits on top of the cake ball for the antennas.
  • Carefully insert your antennas into the cake ball.
  • Repeat process with all love bugs.
  • Let your love bugs sit for 1 hours before serving.

Rootbeer Pie

If you are looking for a way to serve dessert without heating up the house, you won’t want to miss this yummy no-bake pie recipe. It combines the flavors of an American classic, the rootbeer float, and creamy pie to create a cold treat that is perfect for serving to your family after dinner or to friends at a potluck. This Rootbeer pie comes together easily to create a dessert that everyone will love! Freezer pies are one of my favorite ways to indulge my family without turning on the oven, and this recipe is definitely one of our favorites!

Ingredients

  • 3/4 C root beer
  • 1/2 C milk
  • 1 small box instant vanilla pudding mix (4 serving size)
  • 1-2 TBSP root beer extract 
  • 1 container Cool Whip (8 oz/thawed)
  • 1 graham cracker crust (prepared)
  • Cherries and whipped cream
  • Crushed rootbeer barrel candy

Directions

  1. Whisk together the root beer, milk, root beer extract and pudding mix for 2 minutes. (or until it thickens) 
  2. Gently add in Cool Whip.
  3. Continue to stir until all ingredients are thoroughly combined. 
  4. Scoop the mixture into the prepared graham cracker crust.
  5. Place in the freezer for at least 8 hours. (overnight is best)
  6. Remove from freezer and cut into 8 slices.
  7. Garnish with whipped cream and cherries.
  8. Sprinkle crushed root beer barrel candy on the edges of the pie.
  9. Store pie in freezer.

LEGO Themed Cupcakes

What could be more fun for a brick building boy than a snack that is themed around his favorite toy? With this LEGO cupcake recipe, you can combine the fun of play with a one of a kind snack that is perfect for birthday parties, classroom snacks or rainy day that calls for something special!  

This recipe makes 24 cupcakes. 

Cupcake Ingredients

  • 1 3/4 C. flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2/3 C. sugar
  • 1/2 tsp salt
  • 2 tsp. vanilla bean paste
  • 1/2 C. vegetable oil
  • 1/3 C. whole milk, room temperature
  • 2 eggs, room temperature
  • 1 lb. of LEGO candy
  • 3 mixing bowls

Vanilla Frosting Ingredients

  • 1 C. of unsalted butter (softened)
  • 4 C. powder sugar
  • 4 tbsp. heavy whipping cream
  • 2 tsp. vanilla bean paste 

Cupcake Directions

  1. Preheat oven to 350 degrees. 
  2. Line cupcake pan with paper liners.
  3. In a bowl combine flour, baking soda, baking powder, and salt.
  4. Mix well.
  5. Set aside.
  6. In the second bowl, combine sugar and eggs with an electric mixer until combined.
  7. In the third bowl, add oil, milk and vanilla bean paste, mix well.
  8. Add third bowl mix to the second bowl and mix.
  9. Slowly add the wet ingredients to the dry ingredients stirring just enough to blend all ingredients together.
  10. Using an ice cream scoop fill each cupcake tin 2/3rds full.
  11. Bake at 350 degrees for 18 minutes.
  12. Remove cupcakes from oven and allow to cool for 5 minutes.
  13. Transfer cupcakes to a wire rack to allow them to cool completely.

Frosting the cupcakes

  1. Cream powder sugar, vanilla, maple syrup, and butter until mixture is light and creamy. If for some reason it doesn’t cream you can add a few drops of heavy whipping cream until it creams. 
  2. Test to see if the frosting can form and hold a stiff peak by getting a spoonful of frosting and turning the spoon upside down to see if the frosting stays on the spoon or falls off. If it stays on the spoon, you’re in good if not, add more powder sugar 1/4 cup at a time and mix well. 
  3. Once the frosting is ready, fill a pastry bag and use a size 13 tip.
  4. Twist the open end of the pastry bag and squeeze the frosting to the tip.
  5. Start at the outer edge of each cupcake moving in a circle inward to the center of the cupcake. 
  6. Add your lego candy to the top of the cupcake.
  7. ENJOY!

These Lego Cupcakes are easy to make and even easier to devour, and they are completely adorable too! These Lego Cupcakes will be the hit of the party with kids ages 2 to 102!

A few years ago I was gifted  homemade bark from a neighbor and I think it has been on my mind every moment since. I love all of the variations and flavors! While the process of preparing bark is simple, it makes for such a tasty and impressive treat!
