Pumpkin pie spice is one of the quintessential flavors of fall.
Although you can buy containers of this popular spice, it only takes a couple of minutes to whip up your own using ingredients you probably already have on hand.
Use what you need and store the rest in an airtight container for several weeks, if it lasts that long!

If you can’t get enough of this classic flavor, this recipe combines it with hot coffee, Irish cream and delicious whipped cream for a cozy and satisfying adults-only treat. Enjoy!
Ingredients:
Pumpkin Pie Spice:
3 T. cinnamon
1 T. ground ginger
1 T. ground nutmeg
2 t. ground allspice
2 t. ground cloves
Homemade Whipped Cream ingredients:*
1 pint heavy whipping cream
2 T. real maple syrup
1 T. pumpkin pie spice
16 oz. freshly brewed hot coffee
8 oz. Irish Crème
Additional pumpkin pie spice, for garnish
* substitute pre-made whipped cream, if preferred.
Directions:
In a large glass bowl, blend 1 pint of heavy whipping cream with a hand or immersion blender until it doubles in size and changes in texture.
Then, drizzle maple syrup into the bowl and continue blending until the mixture is light and fluffy. Set aside.
Before brewing, sprinkle fresh coffee grounds with pumpkin pie spice and gently shake to evenly combine the mixture. Brew spiced coffee grounds as usual.
Pour 2 oz. Irish Cream into each cup and top with 4 oz. of freshly brewed coffee.
Top with whipped cream and sprinkle with additional pumpkin pie spice before serving.

A few days ago, we visited a local Strawberry Farm. There, we were able to sample honey, collect strawberries and even take a few of them home. After the kids got their fill of strawberries, I somehow had a ton left over. I decided to make a Strawberry Mojito Lemonade.
This drink is very easy to make and is the perfect refreshing drink. If you have fresh lemons and can make homemade lemonade it is best, but you can also buy already made lemonade or if you are in a rush, the Kool-Aid Version. What makes this drink so great is the way the mint and strawberry intertwine with each other. It is simply delish and perfect for a warm summer day.
You will only need a few simple ingredients to make my Strawberry Mojito Lemonade:
20 fresh strawberries
Freshly picked mint
Lemonade
Directions:
Wash/hull & quarter the strawberries.
Put the strawberries into a blender.
Puree the strawberries.
Pour through a fine mesh strainer to remove any larger bits & pieces of strawberry left.
Lemonade:
1 C sugar
1 C water
Zest from 2 lemons
Juice from the 6 lemons
1 gallon of cold water
ice
Directions:
Bring the cup of water to a boil adding the sugar and zest stirring constantly until sugar has dissolved.
Pour water into a pitcher.
Add lemon juice, stir well.
Mix in the simple syrup with the lemon zest, Stirring until the simple syrup has been thoroughly mixed.
Strawberry Lemonade
Ingredients:
Fresh lemonade
Pureed strawberry
Fresh mint sprigs
Ice
Directions:
Pour half of the lemonade into a pitcher.
Add half of the pureed strawberry, stir well
Add ice
Garnish with mint sprigs.
