My family loves Italian foods and spaghetti is a big hit around here. I have been wanting to try something a little healthier that we could all enjoy just to change the menu up. This recipe replaces regular pasta with delicious zucchini noodles. All arrabbiata is a spicy Italian red sauce made with red pepper flakes. It is traditionally served with rigatoni or penne noodles, but here we paired it with zucchini noodles.
This recipe is super easy to make and is kid approved.
Ingredients:
4 large firm zucchini, peeled
3 T. extra virgin olive oil
3 cloves garlic, crushed and peeled
Sea salt and pepper, to taste
Arrabbiata Sauce:
3 T. extra-virgin olive oil, divided
½ T. crushed red pepper flakes
½ c. tomato paste
2 c. fresh tomatoes, chopped and seeds removed
1 t. dried oregano
1 t. garlic powder
salt and pepper, to taste
Garnish is optional but recommended.
Fresh basil, washed, dried and cut into slices.
Parmesan cheese, grated.
Directions:
Prepare the sauce by heating olive oil in a large skillet over medium heat. Add the crushed red pepper flakes and heat until fragrant. Reduce heat to medium-low, then add tomato paste, tomatoes, oregano, and garlic powder. Season with salt and pepper, to taste.
Simmer until sauce is slightly reduced, approximately 20 minutes, stirring occasionally.
Cut the noodles with kitchen scissors once they reach 10-12” long. Place cut noodles on paper or clean kitchen towels to absorb excess moisture and set aside.
Heat olive oil and garlic in a large skillet over medium-high heat until the garlic turns golden brown, about 4-5 minutes.
Reduce heat to medium and remove garlic from the pan with a slotted spoon or fork and discard. Add zucchini noodles to skillet and sauté for approximately 2 minutes. While cooking, use tongs to flip the noodles to ensure they are warmed on each side. Season with salt and pepper, to taste, and set aside.
Remove from heat and toss with warm arrabbiata sauce. Transfer to a serving dish and top with sliced basil and freshly grated Parmesan cheese, if desired.
Serve immediately with a salad or your favorite bread.

I can’t believe it’s already Fall. When fall arrives it seems the last few months of the year just jet by. From back to school and the beginning of holiday planning, working, taking care of our homes, raising kids, etc. we are all busy with our time and sometimes there is barely enough time to slow down and enjoy it all. With everything going on dinner doesn’t have to be complicated or fast food.
We recently started our first recreational sport with the boys and that means this momma is staying busy. From working part-time at their school, being a mom, blogger, and a wife cooking is the last thing I want to spend a lot of time on in the kitchen. Thankfully I can still prepare dinner and sit down with the family in a little over thirty minutes, sometimes less. Luckily, for us, we live in a small town with only one grocery store and that is Food Lion. I shop at Food Lion frequently and came across Knorr Selects on the rice aisle and wanted to try them. I chose the Knorr Selects White Cheddar Broccoli Rice to create this dish of Philly Steak & Peppers. I was in a hurry because the boys had a game that evening, so after school, we rushed home so that I could start dinner and have it ready when we got home. I was really amazed at how quick this dish came together.
First I chopped up my sirloin steak, sprinkling with salt and pepper and drizzled olive oil into my frying pan. Once my pan was heated I added the meat. While the meat was browning I went ahead and chopped my red pepper and red onion up. Once the meat was browned I removed from pan and placed in a separate dish, and added my red peppers and onions to the frying pan for about 5 minutes. When the peppers and onions were ready I placed them in the same dish as the meat. Then I took some warm water and a cup of milk placed in the same frying pan, added Knorr Selects White Cheddar Broccoli Rice packet and brought to a boil. Once it started to boil, I turned the temperature to low/medium heat to simmer for about 10 minutes. After the 10 minutes was up I added my meat, peppers, and onions, mixed it all together creating a dish that was savory.
Of course, I couldn’t wait until I got back from the boys game to try it out. The flavors all came together nicely and tasted just like a Philly steak. When we got home the boys went back for seconds. My only recommendation would be to double the recipe.
