Our family loves dinner time. It’s the one time we all can sit down and enjoy a meal together and have conversations about our day. That’s why I love being able to create meals that don’t take hours to prepare because I want to use that time to spend with my family.
Our schedules are pretty hectic right now. With the kids in school, me working a few days a week at school, and football we seem to stay on the go. Then I have to factor in the hubby’s schedule that is hectic on its own I prefer not to spend too much time in the kitchen. That’s why here recently we have been relying on Knorr® Selects at Food Lion to create some of our favorite dishes. They’re gluten-free except the pasta ones so be sure to check the package when you go to select. They also do not contain artificial flavors or preservatives so I feel good about serving these up in our simple meals.

This time I wanted to try a dish with chicken since we have been eating beef a little much here lately. I chose the Knorr Selects Cheddar Broccoli that is a rice and pasta blend with broccoli in a cheesy cheddar sauce.

Ingredients
- 2 pks. Knorr Select Cheedar Broccoli
- 1-2 lb chicken breast
- 2 c. milk
- 1 1/2 c. water
- purple onion, sliced
- red bell pepper, long/thin slices
- salt & pepper
- 2 tbsp. olive oil
Instructions
Sprinkle pan with olive oil.
Heat on medium heat.
Dice chicken breast into cubes.
Lightly salt and pepper chicken pieces.
Place in pan and cook through.
Remove from pan and set aside.
In the same pan add onions and peppers.
Cook through until peppers are soft.
Remove from pan and set aside with chicken.
Pour milk, water and packets of Knorr Selects into pan.
Bring to a boil.
Turn down to low/med heat and cook 8-10 minutes.
Remove from heat.
Add chicken, peppers and onions to the pan with the rice.
Mix.
Sprinkle with salt and pepper.
Enjoy!
As you can see this recipe is kid approved not by just one by two of my boys. They went back for seconds but was only able to capture this photo before he cleaned his plate for the second time.
